I just picked up a cheap Galaxy S5 for use mostly as a media player, particularly when traveling (replaceable battery, 256 MB SD card capability and ability to output via HDMI). It’s running 4.4.2 and there doesn’t seem to be any updates available. Are there any newer OS versions available, and if so, do I really want to upgrade? So far it’s doing everything I need it to do, although I am still searching for a good music player. Should I just leave it as-is? Whatever shell Samsung put on it is kind of annoying, so I wouldn’t mind ditching that if I have the option.

depending on how dirty you want to get with the code side of things (like root, roms, and such) it looks like the xda forum is active for that phone.

trying it now.
Next question - how do I get old apps? I can’t install Hulu because it says it’s not compatible with my os version. On iOS you offered an older, compatible version, but I don’t know how to do that in the Play store.

You would need to at least root the phone or unlock the bootloader (depending on your phone ) . Then you can just flash a custom rom and/or bootloader which is available on the forums. No need to mess around with coding as such.
Going up from 4.4.2 is certainly advantageous imo, much less laggy and better battery (I used to flash roms, bootloaders, etc on my phones since 2.3 was new )

I have one that I keep in the car, I recently upgraded to an S6. There are some good roms for the s5, I use deoxPer Pure MM3.0 (search for it on xda) because it has xposed and the stock camera app. If you don’t mind about que camera (stock app has better quality) you can upgrade to Oreo or Pie useing lineage OS, I think there’s a few youtube videos to help you with that. I also recommend installing youtube Vanced, the background playback is good for music when driving. As launcher I prefer evie
